Nov.22Granola!



Nothing crazy about this recipe, I just love how easy it is to modify!  No cashews on hand?  No problem….just add some walnuts…or pecans even!  Use it as a guide to come up with your favorite granola go-to.  It is a time investment of an hour and 15 minutes, but seriously you will be so glad that you did.

Granola

  • 3 cups oats
  • ½ cup milled flax seed
  • ¼ cup sunflower seeds
  • 1 cup of almonds (slivered or crushed)
  • 1 cup of walnuts
  • ½ – 1 cup of whatever else you have for nuts (macademia, cashews, etc)
  • ¾ cup coconut
  • ¼ cup plus 2 tablespoons dark brown sugar
  • ¼ cup plus 2 tablespoons maple syrup
  • ¼ cup vegetable oil
  • ¾ teaspoon salt
  • 1 cup of raisins and/or dried fruit of your choice (crystallized ginger is good too)

Preheat oven to 250 degrees.

Combine oats, nuts, coconut, and brown sugar in a large bowl. In a separate bowl, combine syrup, oil and salt.

Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes.

Remove from oven and transfer into large bowl. Add raisins or dried fruit and mix. Let cool and store in a sealed container.
