Dec.27¡Viva Huevos Rancheros!
ShareThisMy absolutely new favorite breakfast invention to date. Definitely not the prettiest appearance-wise but neither my mouth nor my stomach have eyes so what do I care? This recipe is really easy and delicious and one of the bonuses of it all - it helps you clean out your fridge after taco night. If you like mexican - Ay Dios Mio - I think you might fall in love. I ate them two mornings in a row!
Alright so here is how it all went down.
Christmas eve eve morning I asked Heidi what she wanted to eat for breakfast. To my surprise she said “how about huevos rancheros”. She said it as though she had been looking at a menu and decided on “the usual”. Hmmm. What are they exactly… I was up for the challenge and I had a pretty good idea of what they were. I remembered when I had waited tables at the Bridge 41, huevos rancheros sold really well on the brunch menu. I never did get to sample them though. Anyway, since the Bridge 41 is no longer in existence I knew I had to figure out another recipe resource. I jumped online to see what what was what. I should have known - there were about a hundred and fifty different recipes and each one was completely different from the next. A thought had popped into my mind. Heidi and I had seen a recipe for huevos rancheros posted on our friend Terri’s fridge. I was bummed because I couldn’t remember ANYTHING about it. The only thing my memory would recall was the delicious photo that accompanied the recipe. Definitely yum, but ugh. How would I find that recipe?! I closed the Vaio and headed for the fridge with only a picture in my head to work from.. I was syked though because a few nights earlier we had turkey tacos for dinner so there was quite a variety of fresh mexican/taco-like ingredients on hand. Sounds corny but for a quick second I felt like I was on “Top Chef” and Tom Colicchio (Jersey boy - w00t!) just came into the kitchen and told us about our latest Quickfire Challenge. Tom speaks cold and calculated (in my head), “You have 30 minutes to make the best tasting dish you can with only what you have in this refrigerator.” Okay Tom! Don’t worry I will make you, Katie Lee Joel and Gail Simmons fall in love with my dish! I will! I will!
Okay, okay… enough of the craziness…BUT with all that being said, just use whatever you like, and/or have on hand for this dish as it is simply a matter of preference. This posting I am sharing “my” version of huevos rancheros - ¡Levante los manos!

Most of us have these ingredients in our pantry or refrigerator … a definite plus! Legally, may I make this for supper instead of breakfast? You are right about the eye-appeal factor. Perhaps Tom will be gone from Top Chef before you are a contestant
