This reduction has no shame. It knows how good it is, in fact it doesn’t even try to hide it. This reduction doesn’t even care…it has no problem with getting in your face and saying, “Go ahead! Serve me drizzled over a grilled rack of lamb! Why not try a pork roast or a beef tenderloin!” The cockiness rears its ugly head and next thing you know things like this come out: “Yup, I am so freakin’ awesome you can EVEN serve me on prosciutto and pears…uh huh yeah or, or, or you wanna get crazy? Fine. Try this one…skate!” (A.D.D. moment) Skate….

Uh yeah…so I don’t know about you but I don’t have time for recipes throwin’ ‘tude like that…I just don’t need it. But damn, this reduction does have a point. It is totally versatile and it is absolutely divine! It goes from meat to fruit to fish without blinking an eye. Did I mention it is wicked SIMPLE to make? Someone I cook for pretty regularly (who could that be?) always starts with a small bowl of this reduction on the side (for dipping lamb chops into) and rarely ends with anything more than a smear. It really is that good. Like I said, it goes extremely well with a grilled rack of lamb….

A.D.D. MOMENT:

Skate. SK8. Not roller Skate. Not Skate board. Just skate. Yes the boneless, low in calories, low in fat, the loaded with proteins and vitamin E…skate. Haven’t tried it yet…but when I do, you will hear ALL about it. Ahhhhh memories of fishing in a row boat on the ocean in Canada with my sister and grandparents…catching skates and freaking out. Can’t wait to try skate!
